
Kanazawa sits between the Sea of Japan and the Hakusan Mountains, a location that has long shaped the city's food culture. With access to some of Japan's finest local ingredients, Kanazawa is the perfect place to take part in this hands-on temari-sushi making experience.
The surrounding region provides rice from the Kaga Plain, locally grown Kaga vegetables, clean mountain water, and fresh seafood from the Sea of Japan. Kanazawa is widely known as one of Japan's best food destinations, with visitors traveling from across the country to enjoy seasonal specialties.
A local chef will guide you through the full process: preparing the sushi rice, forming the temari shape, and skillfully arranging your sushi for presentation.
Along the way, you will also learn about the history of Kanazawa’s culinary history, role of sushi in Japanese food culture and what sets temari-sushi apart from other styles.
Sushi toppings include Kanazawa's fresh local seafood, seasonal Kaga vegetables, and other regional ingredients. (Vegetarian and gluten-free options available.)
Once your sushi is complete, sit down together to enjoy your creations as a full temari-sushi dinner, followed by dessert and locally-made kaga-bocha tea to close the experience.





The word temari means "hand ball" in Japanese, referring to a traditional embroidered ball with a history stretching back centuries. Introduced to Japan around the 7th century, it was initially used for play, but over time became associated with the Japanese aristocracy, with noble women creating intricate designs using silk threads and geometric patterns. Kanazawa has its own version of this craft, known as Kaga Temari.
Temari-sushi takes both its name and shape from these traditional embroidered balls. Each piece is formed by hand into a small, rounded form and decorated with colorful ingredients to embody the temari craft.





The experience is held in a 100-year-old restored machiya, a style of traditional wooden townhouse historically found throughout Kanazawa.
The building features classic architectural details and a Japanese garden, carefully preserved to maintain its original character.
